Chef Joe Rolle

Chef Joe Rolle brings nearly twenty years of culinary experience from some of the Twin Cities’ premier restaurants. He began his career at The Dakota under the late, legendary Jack Riebel, before cooking at acclaimed kitchens including Martina, Il Foro, and Borough.

Dario is the culmination of Rolle’s professional journey, anchored by a deep love for Minneapolis. He leads an educational, collaborative kitchen of ambitious chefs, with a menu that evolves each season to showcase the freshest ingredients and the natural rhythm of the harvest.

Stephen Rowe

As Dario’s Beverage Director, Stephen Rowe brings a wealth of experience from nearly a decade behind the bar as a founding team member of the world-renowned Marvel Bar in Minneapolis’s North Loop.

Stephen leads a first-rate beverage program at Dario designed to stand on its own while complementing Chef Rolle’s menu, including a groundbreaking spirit-free offering that mirrors the depth and creativity of the full-proof cocktails, alongside functional beverages and de-alcoholized wines.
